Baked salmon
Our recipe for baked salmon with Hasselback potatoes can be something new to surprise your loved ones. Another good thing is that you can serve it on the table only after an hour of cooking.
Salmon is one of my favorite seafood. I also love the crispy crust and the aroma of herbs and spices on Hasselback potatoes. And what about the combination between them. Try and cook it, you will not regret.
Ingredients for 6 servings:
- 1.2 kg of fresh potatoes
- 2 tbsp. Olive oil
- parsley for sprinkling the potatoes
- 30 g unsalted butter – softened
- 1 salmon fillet (1 kg)
- 15 g of finely chopped dill
- zest of 1 lemon
Preparation:
Preheat the oven to 200oC or 180oC with a fan.
Carefully make incisions in the potatoes. Put them in a large bowl, add olive oil and stir by hand until evenly covered. Sprinkle with parsley. Put in a pan and bake for 30-35 minutes, stir and bake until crispy.
Rub 1 tbsp. soft butter on salmon fillet and season with salt and pepper.
Remove the pan with the baked potatoes, push them aside and place the salmon fillet skin side down. Bake for 25 minutes.
Garnish the salmon with fresh dill and thin strips of lemon zest and serve with potatoes.
