Tuscany soup
I tasted this delicious Tuscan soup with the taste of an Italian province in a typical stone house near Florence, turned into a tavern more than 50 years ago. The owner Giovanna cook simple and delicious meal from her grandmother’s recipes. Try to make at home a delicious and nutritious Tuscany soup.
Ingredients:
- 2 tbsp. Olive oil
- 500 g of sausage
- 1 onion
- 2 carrots
- 2 stalks of celery
- 1 tbsp. fresh thyme
- 2 cloves of garlic, crushed
- 400 g beans
- 850 ml of vegetable broth
- 400 g of peeled tomatoes
- 100 g cabbage
- salt
- 25 g parmesan
- toasted bread for serving
Preparation:
Fry the sausages, onions, carrots and celery in the olive oil. Add the thyme and cook for another 2 minutes. Transfer to a large saucepan and add the beans, tomatoes and broth. Put the cabbage and remove the soup from the fire. Serve with parmesan and warm bread.
