Lemon cake recipe from Tuscany

Lemon cake

Chopped in thin slices this Tuscan Lemon Cake perfectly blends with fresh strawberries and cherries, home-made whipped cream, or simply a glass of delicious dessert wine.

Ingredients:

  • 1 tea cup butter
  • 2 tea cups Sugar
  • 3 eggs
  • 3 tea cups flour
  • 1 packet of baking powder
  • ¼ tsp. salt
  • 1 tea cup whey /milk, cream/
  • 1 lemon

Preparation:

Beat the melted butter with sugar. Add the eggs and stir until the sugar melts. Mix the dry ingredients – flour, baking powder and salt. In Tuscany add a cup of whey, if you do not have it, replace it with liquid cream or fresh milk. Stir until a smooth mixture is obtained. Add 3 tablespoons lemon juice and grated lemon peel. Bake in a non-stick panful in a preheated oven at 150ºC for 1 hour.
