Torta Della Nonna (Grandma’s Cake)

This is an elegant and delicious dessert that you can try in Florence. To make a really delicious Torta Della Nonna (Grandma’s Cake), it is recommended to use homemade butter dough instead of ready-made from the store.

Ingredients:

For the creme:

  • 5 egg yolks
  • 2.5 cups of fresh milk
  • ¼ corn starch
  • ⅓ cup crystal sugar
  • Vanilla

For the butter dough:

  • 2 tea cups Flour
  • ½ tea cup crystal sugar
  • 120 g cold butter cut on cubes
  • 1 egg
  • zest of 1 lemon
  • ¼ tsp. baking powder
  • pinch of salt

Preparation:

Start with the creme.

Prepare it by heating the milk but without boiling.
In a bowl, beat the yolks and sugar, add the starch. Add the milk, stirring constantly.
Return the mixture to the heat and stir until the creme thickens. Transfer to a bowl and cover with cling film so it doesn’t catch the crust.
When cool, store in the refrigerator.

It’s time to prepare the butter dough.

In a bowl, sift the flour and add all the dry ingredients and grated lemon zest. Добавете студеното масло, нарязано на кубчета и разбъркайте с шпатула.
Knead by hand until smooth, form into a ball, wrap in cling film and cool for 30 minutes.
Roll out on a floured surface a sheet with a thickness of ½ cm. Spread the dough on a tart tray or pie, shape the edges nicely and pierce the base with a fork.
Refrigerate for 30 minutes before using it.

To complete your Torta della Nonna:

Remove the baking tin with the cold butter dough and fill with the cooled creme, sprinkle with a cup of pine nuts (soaked for 5 minutes in cold water) and bake in a preheated oven at 180°C for 50 minutes or until golden. Remove and allow to cool completely. Before serving, sprinkle with powdered sugar.
