Tarator
The traditional Bulgarian tarator is one of everyone’s favorite dishes – from children to adults. In fact the recipe comes from the Middle East and its varieties can be found in many countries in this region. Although it’s easy to prepare, many people underestimate the preparation steps and in the end, the final result is not exactly what it should be. But, if you follow the steps below, I guarantee that you will surely be happy in the end.
Ingredients:
- 2-3 garlic cloves
- 40 ml of olive oil
- Salt (recommended to use coarse sea salt)
- 1 large cucumber
- 1 bunch of dill
- 500 g Bulgarian yogurt
- 750 ml water
- Walnuts for sprinkling
Preparation:
In a mortar, crush the garlic with the olive oil and sea salt until it is finely porridge.
Cut the cucumber and the dill finely and pour into a deep bowl. Do not grate the cucumber of the grater, but cut it.
Add the garlic mixture to the cucumber and the dill.
Beat the yogurt by shaking the bucket before opening. Add it to the bowl and then pour the water.
Stir well. Taste it and add more salt if necessary.
Before serving, divide into bowls and sprinkle with crushed walnuts.
