Spring rolls with spicy Thai peanut sauce
This peanut sauce is good for dipping spring rolls with vegetables, dressing for salads, as well as flavoring noodles and chicken.
Ingredients for spring rolls:
- 1 pack of rice wrappers
- optional vegetable mix: cucumber, carrot, red bell pepper, avocado, red cabbage, fresh salads, edible flowers
Ingredients for the sauce:
- ½ cup peanut tahini
- 2 tbsp. soy sauce
- 1 tbsp. rice vinegar
- 2 tbsp. brown sugar
- 2 tsp. spicy garlic sauce
- 1 tbsp. lime juice
- 3 grated garlic cloves
- 1 tbsp. grated ginger root
- 2–4 tbsp. hot water
Preparation:
Firstly, prepare the sauce by mixing all the ingredients without water. Gradually add hot water to get the sauce with the desired density. Then prepare the vegetables for stuffing: wash the greens, and cut the carrots, cabbage, peppers and avocados into thin strips.
Dip the rice wrappers in water. Spread them on a lightly moistened and clean board and begin slicing in the middle of the wrappers. Wrap it tight to roll and serve with peanut sauce.
NB: To get closer to Asian taste, add black sesame to taste if desired. Also try fruit combinations – strawberry, mango, berries.
