Salad with spinach and cucumber, goat cheese and capers
This fresh salad with spinach and cucumber comes from Spain and is a real summer temptation. It has a pleasant cooling effect and is a great company for an ice-cold summer drink like mastic or ouzo.
- 150 g goat cheese
- 2 cucumbers
- 100 g baby spinach
- 1 lemon
- 1 tbsp. capers
- 4 tbsp. Olive oil
- balsamic vinegar
Cut cheese into cubes.
Wash and peel the cucumbers, cut them into thin slices.
Wash the lemon and grate the peel on a fine grater (only the yellow part so as not to be bitter).
Dip the lemon peel into boiling water for 1 minute. Remove and dry.
Drain lemon juice and whisk with olive oil, balsamic vinegar, salt and sumac.
Wash the spinach, dry and add cucumbers, goat cheese, capers and lemon peel. Stir and sprinkle with sumac and salt. Pour lemon vinaigrette and serve.
For more color and taste you can sprinkle with edible flower petals.
