Roasted radishes
Spring salad with roasted radishes, fresh spinach, baked potatoes and green onions
If you love too radishes, it is time to celebrate the early spring. Grilled radishes in nice olive oil, sea salt and spices unfold their sweet side and combined with salad or served with blue cheese dip, turn into a little culinary feast.
Ingredients:
- 2 bunches radishes (about 20 radishes)
- 2 tablespoons olive oil
- ½ lemon (squeezed juice plus grated zest to finish the meal)
- 1/2 tsp. Sea salt
- black pepper to taste
Preparation:
Clean the radish by keeping the finer inner leaves. Later you will find out how to use them.
Heat the oven at 180°C or at 160°C with a fan. Put the cleaned and diced radishes in the bowl, add the olive oil, lemon juice, salt and pepper to taste. Stir to seasoned well. Put them in a baking pan on baking paper. Bake for 20-25 minutes or until they become golden and can easily pierce with a fork. Serve sprinkled with freshly grated lemon peel.
