Roasted almonds with saffron
These roasted almonds are great nibbles for a glass of Scotch, Irish, bourbon or cognac. Easy, but in the same time attractive recipe which gives a touch of sophistication to any casual sitting „for a glass of whiskey“.
Ingredients:
- 600 g of blanched almonds
- 2 tbsp. Olive oil
- ¼ tsp. saffron
- salt
Preparation:
To blanch the almonds, pour them with one liter of boiling water, leave them until the water is tolerable to touch and then peel them.
Heat olive oil in a pan and add the saffron, and shortly thereafter, and almonds. Stir until the almonds are well flavored, transfer to a small saucepan and season with salt. Bake in a preheated oven at 180ºC for 25-30 minutes (until golden and smell beautifully of roasted nuts).
They are delicious warm and cold. You can store them in a tightly closed box at room temperature for up to a week.
