Gentle mousse with chestnuts and chocolate
The sweetness of the chestnuts is perfectly complemented by the depth taste of quality dark chocolate. In my mind, this delicate mousse with chestnuts and chocolate brings the spirit of autumn, when the leaves of the trees first acquire all kinds of warm colors, and then gradually form a colored carpet swept away by the cold autumn wind.
- 400 g chestnuts
- 1 cup milk
- ¼ cup sugar
- 1 glass of water
- 200 g dark chocolate, coarsely chopped
- 2 eggs at room temperature with egg yolk separated
- 2 tbsp. Sugar
- 200 ml whole cream
- 1 tsp vanilla extract
To make chestnut puree,
boil the chestnuts and peel them. Put 250 g of peeled and coarsely chopped chestnuts in a small saucepan with milk, sugar and 1 cup water and cook until liquid is reduced. Blend to a smooth puree. Leave aside to cool.
During this time, prepare the chocolate mousse.
Melt the chocolate in a water bath. Remove from heat and allow to cool slightly, add the yolks and stir. Add the cream and vanilla extract. Beat with a mixer egg whites and add sugar. Stir until the sugar is completely dissolved.
Combine chestnut puree and chocolate mousse.
Divide the mousse into cups or small bowls and garnish with caramelized sugar (made from ¼ cup sugar, 2 tablespoons water) and whipped cream.
