Italian salad with roasted peppers and anchovies
We introduce you this Italian salad with roasted peppers, reflecting the spirit of the culinary traditions of the Apennines. Typical of Italian cuisine, the salad is very colorful and is full with a variety of flavors.
- 2 large red peppers
- 2 large yellow peppers
- 10 grilled green olives
- 6 fillets of anchovies in olive oil
- 2 tbsp. capers
- 1 tsp finely chopped rosemary
- 1 tbsp. red wine vinegar
- 1 clove of garlic
- 2 tbsp. olive oil, plus extra for sprinkling
Roast the peppers and peel them, remove the stalks and seeds and cut into strips.
In a bowl, place the olives, anchovies, capers, rosemary, garlic, vinegar and olive oil.
Add pepper strips.
Serve with slices of rustic bread with yeast, soft goat cheese or mozzarella.
