Haddock with spinach
Haddock with spinach is a recipe suitable for light weekday dinner when you want to eat something tasty, but do not want to spend a long time in the kitchen to prepare any specialty. It is really easy and fast, and with a glass of light white wine in addition you will have a really nice finish of the day. And if it’s a cool summer night and you’re lucky with an open porch, the pleasure is complete.
Ingredients for four portions:
- 4 fillets of haddock (about 150 g each fillet)
- Sea salt
- freshly ground black pepper
- 2 tbsp Olive oil
- 1 onion
- 25 g of dark raisins
- 25 g of bright raisins
- 30 g cedar nuts
- 1-2 tsp. capers
- 2 large handfuls of cleaned and washed spinach
Preparation:
Flavor the fish with olive oil, sea salt and black pepper. Prepare it for steam for 25-30 minutes until ready or wrapped in baking paper in a preheated 180°C oven.
During this time prepare the toppings of spinach and cedar nuts. For this purpose: Caramel the onion in a pan, add dark and light raisins, cedar nuts and capers. Finally, add the spinach, stir and cook until ready. Be careful not to overcook the spinach. Once it is soft, remove it from the fire, so you will keep its freshness and taste, and your dish will be more beautiful.
