Grilled peaches with ricotta
Very easy to prepare and unexpectedly delicious dessert. You will experience true delight and pleasure, especially if you love juicy peaches. The short stay on the grill pan emphasizes the aroma of the delicious fruit and gives them extra sweetness, ain halves and remove the stones, marinate them with a little honeynd the light airy ricotta, the cantuccini and the spices complement the bouquet of flavors in the plate. I tried grilled peaches with ricotta on our last trip to Tuscany and I hasten to share it with you. As you know, the Italians are renowned gourmets and craftsmen in the preparation of delicious food with easily accessible products.
Ingredients:
- 2-3 peach fruits
- 250 g ricotta
- 5-6 cantuccini or other almond biscuits
- honey for marinating the peaches
- powdered sugar or honey for the creme
- vanilla
- mix of green spices from the garden – basil, mint, thyme twigs, sprig of rosemary and lavender blossoms
Preparation:
Wash the peaches, cut them on halves and remove the stones, marinate them in a little honey, optionally add some grated ginger. Put the peaches on a heated grill pan and cook until caramelized. No need too much time, be careful not to over cook. Flavour the ricotta with powdered sugar or honey, add the vanilla. In a blender, make crispy crumbs of cantuccini or another type of almond biscuits. Sprinkle with a bouquet of fresh spices from the garden. Serve with Italian Vin Santo.
