Grape salad
This grape salad is a true euphoria of flavor and colour. To achieve the maximum effect, I recommend using different colours and sorts of grapes as to enrich the flavor by combining the smoked meat and the blue cheese with different sweet aromas.
Ingredients:
- 2 cups of arugula
- 1 cup a mix of white and black grapes
- ready-made smoked-boiled chicken (60g per portion)
- walnuts
- blue cheese
- 6 tbsp. mayonnaise
- 1 tbsp. honey
- 1 tbsp. wine vinegar
- salt
Preparation:
Preheat the oven to 220˚C. Put the walnuts in a small tray and bake them until golden.
Wash and percolate well the fresh arugula leaves.
Prepare the grapes by washing them, cutting them in half and removing the seeds. If your grape mix contains grapes without seeds, you may choose to leave them whole instead of cutting them in half. However, have in mind that whole grapes tend to “escape” the fork and you may find yourself chasing after them around the table.
Cut the chicken into small pieces.
To prepare the dressing, mix in a cup the mayonnaise, the wine vinegar, the honey and add some salt.
Distribute the arugula between the plates, arrange the chicken and the grapes on top and finally – finish with the roasted walnuts and the blue cheese.
Serve the dressing in a small cup next to the salad.
