Fattoush Salad
Simple but very tasty salad from the Middle East region, in which the characteristic of us croutons are replaced with Arabic bread. In fact, part of the popularity of the Fattoush salad owes to the fact that the rest of the previous day bread is used.
Ingredients:
- 2 Arabic Breads /like those with which they make the doner/
- Olive oil
- ½ tsp. sumac
- salt and pepper
- 1 lettuce, chopped
- 1 cucumber, chopped
- 5 tomatoes, sliced
- 5 stalks green onions, chopped
- 5 radishes, thinly sliced
- 2 tea cups finely chopped parsley
- 1 tea cup fresh chopped mint leaves
For vinaigrette with lime:
- the juice of 1½ lime
- 1/3 tea cup Olive oil
- salt and pepper
- 1 tsp sumac
- 1/4 tsp cinnamon
To finish:
- 2 tbsp. pomegranate sauce
Preparation:
Tear or chop the bread into medium-sized pieces. Preheat 3 tablespoons of olive oil in a large frying pan and bake lightly the bread as careful not to burn it. Add salt, pepper and the sumac. Stir and remove from heat.
Finely chop the lettuce, cucumber, tomatoes, green onions, radishes, parsley and mint and mix them in a large salad bowl.
Stir the lime juice with the olive oil and spices in a small bowl and flavour the salad.
Serve by placing the salad in the center of a round plates and arranging the baked and spicy Arabian bread around it.
Sprinkle with pomegranate sauce.
