The last days of May and the beginning of June is the time to prepare an aromatic homemade elderberry syrup.
Perfect cooling drink for hot summer days. I adore the afternoons, spent in the shadow of the vine in front of our house, often in the friend’s company. A jug of elderberry syrup diluted with sparkling water and ice cubes is a must-have accessory these days, often displacing even the classics like frappe. Usually in the jug we add chopped lime and lemon, and a fresh blade of mint or garden mint from the herb garden. Optionally, you can add strawberries, raspberries, black-currant and other fresh fruits.
Ingredients:
- 30 of elderberry blossoms
- 1 liter of spring or mineral water
- 1 kg of sugar
- 3 powders of Citric acid
Preparation
Pour the elderberry flowers into the spring water and let them stay for 24 hours. Strain through a clean gauze. Add the sugar and stir well until completely dissolved. Add the citric acid and stir again.
For fresh consumption, you can replace sugar with honey and skip the citric acid.
It remains only to dilute it in a ratio of 1:3 or 1:4 with spring or carbonated water and enjoy a pleasant refreshing drink.
