Eggplant fan – stuffed with mozzarella and feta cheese
This is probably the easiest eggplant recipe that I know. It is really very easy for anyone to cook an eggplant fan and at the same time, the recipe is terribly delicious. It combines some of the most characteristic flavors of the summer. The combination of eggplant, tomato and different types of cheese is the basis of many recipes, and the taste of roasted garlic and thyme further excite the appetite.
- 2 eggplants
- 250 g mozzarella
- 100 g of feta cheese
- 2 large tomatoes
- 8 cloves garlic
- 60 ml of olive oil
- ½ tsp. dried oregano
- black pepper
Cut the two aubergines into slices without reaching the stalks. Dissolve them carefully so that the slices diverge slightly and you get something like a fan. You can find out how to do it from the one in the picture. Spread with olive oil on all sides. It is best to spread them with your hands so that the olive oil can be spread evenly everywhere.
Cut the tomatoes and mozzarella into equal thick slices. Arrange the slices in the sliced eggplant, alternating a row of mozzarella with a row of tomatoes.
Season with salt and pepper and crush feta cheese on top.
Add the whole garlic cloves without peeling them. The garlic will caramelize nicely and will add a nice finish to the taste of your dish.
Bake for about 30 minutes in a preheated oven at 220°C.
