Cold salad with red grapes
This season, I am unusually fond of the idea of using grapes in different variety of dishes. In the midst of the harvest, you cannot miss the chance to taste the combination I present you. This cold salad with red grapes I can, with a clear conscience, declare to be my discovery of the season.
Ingredients:
- 60g walnuts
- 1 cup boiled pasta (Farfalle)
- 2 cups broccoli, thinly chopped
- 1 cup mayonnaise
- 3 tbsp. crystal sugar
- 1/3 cup finely chopped red onion
- 2 tbsp. red wine vinegar
- 1 tsp salt
- 1 cup red seedless grapes
- 6 pieces of bacon
Preparation:
Heat up the oven to 220˚C. Put the walnuts in a small tray and bake until golden. In another tray, on parchment paper, put the thinly sliced bacon. Bake until golden and then turn it on its other side to reach the same state. When it’s ready, take it out and put it on parchment paper to drain and cool down completely. This way, the bacon will be crispy and you can easily crush it onto the salad.
Cook the pasta following the instructions on its package. Prepare the broccoli. To prepare the dressing, mix the mayonnaise, the sugar, the wine vinegar and the salt together in a big bowl. Add the broccoli, the grapes and the pasta to the dressing. Stir them together so the aromas can blend, wrap them with stretch wrap and leave the bowl in the refrigerator for 3 hours.
Your salad is now nearly ready, you just need to arrange it in beautiful plates and garnish with the roasted walnuts and the bacon chips. Enjoy!
