Cold beetroot soup

This unforgettable cold beetroot soup is one of the iconic recipes of Lithuanian cuisine. The recipe is very colorful, with a characteristic pink color and very suitable for summer. If you are about to travel to Vilnius, the capital of Lithuania be sure to try it somewhere in local restaurants, and if not, prepare it yourself at home. It won’t bother you, and all products are easy to find.

Ingredients:

  • 100 g cucumber, diced
  • 100 g of boiled beetroot
  • 1 liter of kefir
  • 3 green onions
  • bunch of dill
  • 10 g sugar
  • 5 g salt
  • boiled eggs (one per serving)

Preparation:

Boil the beetroot. Grate it on a wholesale grater or cut into cubes.

Add the kefir, if you don’t have one – use a mixture of well-stirred yogurt and a little milk. Add the sliced cucumber, dill and season with sugar and salt.

Refrigerate for a few hours.

Serve it garnished with hard-boiled eggs.

The perfect side dish is boiled baby potatoes or nice bread with leaven.
