Christmas Cake
As you prepare this Christmas almond, marzipan and cinnamon cake, your house will be full of flavor and the Christmas mood will overwhelm the whole family. And here’s the secret to making this sweet bread with nuts and dried fruits.
Ingredients:
For the dough:
- 1 egg
- 50 g butter
- 125 ml of lukewarm milk
- 100 g powdered sugar
- 300 g white flour
- packet of yeast
For the stuffing:
- 50 g butter
- 50 g of powdered sugar
- 50 g marzipan
- 2 tbsp. cinnamon
You will also need:
- 100 g whole almonds – pre-soaked in hot water and peeled
- 100 g of dried fruits – raisins, blueberries, cherries, etc. If you use apricots, plums or other large fruits, cut them into small pieces.
Preparation:
Mix the yeast with 2 full tablespoons. flour, 1 tbsp. sugar and lukewarm milk. Allow 15 minutes to activate. Prepare a deep bowl, sift the flour and make a well in which you pour the yeast, egg, melted butter and sugar. Knead smooth dough and let rise 40 minutes.
Pour the dough over a floured board, mix and roll a bark about 1 cm thick. Spread with the stuffing, sprinkle with almonds and dried fruits. Wrap the bark on a roll and form a wreath. Transfer the beautifully shaped sweet bread in the pan on a baking paper and let rise again for about 30 minutes.
Bake in a preheated oven at 180ºC for about 30-35 minutes. Sprinkle with powdered sugar and decorate as desired.
