Mini Caprese salad with cherry tomatoes, mozzarella and pesto
If you, like me, adore the combination of tomatoes, mozzarella and basil, I highly recommend you try this exquisite mini party version of the classic Italian Caprese salad.
- 250 to 300 g of cherry tomatoes
- mini mozzarella (100 g per serving)
- fresh basil leaves
For the dressing:
Prepare a quick pesto variant in blender by mixing:
- 2 handfuls of basil leaves
- a handful of pine nuts
- Pinch of salt
- clove garlic
- 50 ml of olive oil
- 30-40 g parmesan
Blend briefly and your fresh and fragrant Pesto sauce is ready.
Use wooden toothpicks such as skewers and chop cherry tomato, basil and mozzarella. Put the prepared bites in a suitable dish, pour over with Pesto and serve immediately.
