Apple pastry with butter cookies & cinnamon

Apple pastry

We are very fortunate to have a large yard filled with a wide variety of fruit trees. Among them are several apples from different varieties that ripen together in September. We have sweet and sour varieties that are very delicious, but not very hard. There are also those who endure in the cellar all winter and are good for eating until spring. Right next to our house there is a big apple tree, in the crown of which I very much enjoyed climbing as a kid. Its fruits are quite large, slightly sour and not very juicy. We make this apple pastry and other such cakes and cookies that I intend to introduce to you in other publications.

Ingredients:

  • 125 g butter
  • 1 packet of butter cookies
  • 1 kg of apples, preferably from a sour variety
  • 4 eggs
  • 1 tea cup Flour
  • 1 tea cup Sugar
  • 1 baking powder
  • cinnamon
  • Vanilla

Preparation:

Melt the butter in a suitable pan and arrange the cookies over the top. Cut the apples into small cubes, sprinkle them with cinnamon and spread them evenly over the cookies. Press them on top with a spoon or something suitable to create a homogeneous mass.

Pour the eggs and sugar into a deep bowl and mix well. Add the flour, baking powder and vanilla and beat with a mixer until a homogeneous mixture is obtained.

Spread the resulting mixture on the apples.

Bake for 10 minutes at 200°C in a preheated oven and then for another 40 minutes at 150°C.

If desired, sprinkle with powdered sugar.
